Easy Rhubarb Cake Recipe
Ingredients
Cake:
- 2 cups all-purpose flour
- 1 ¼ cups white sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 eggs, beaten
- 1 cup sour cream
- 3 cups diced rhubarb
Streusel:
- 1 cup white sugar
- ¼ cup butter, softened
- ¼ cup all-purpose flour
- ¼ teaspoon ground cinnamon, or to taste

Turn the oven on to 350 degrees F (175 degrees C). A 9×13-inch baking dish should be greased and floured.

Make a cake: In a big bowl, mix the flour, sugar, baking soda, and salt together. Add the eggs and sour cream and mix them in until the mixture is smooth. Then add the rhubarb and fold it in. Add to the dish that has been made and spread out evenly.

To make streusel, mix butter and sugar in a medium bowl until the mixture is smooth. Mix in the flour until the dough is crumbly. Put the mixture on top of the cake, and then lightly sprinkle cinnamon on top of that.

It will take about 45 minutes of baking in a hot oven until a toothpick stuck in the middle comes out clean.
