INGREDIENTS

CRUST:

  • 6 full-sheets chocolate graham crackers
  • 2.5 tablespoons melted butter

CHEESECAKE:

  • 1 8-ounce package reduced fat cream cheese, softened
  • 1/3 cup granulated sugar
  • 1/4 cup semisweet chocolate chips melted and slightly cooled
  • 1 teaspoon instant coffee granules
  • 2 teaspoons hot water
  • 3/4 cup plain Greek yogurt
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 large egg room temperature

INSTRUCTIONS

TO MAKE THE CRUST:

  • Bake at 350 degrees Fahrenheit.
  • To make the removal of the baked goods easier, line a baking pan measuring 8 inches by 8 inches with aluminum foil, making sure to leave some overhang.
  • The chocolate graham crackers should be placed in a food processor and processed until they are reduced to a finer consistency. Put the crumbs in a small bowl and blend them with the butter that has been melted until they are completely incorporated.
  • Applying a strong pressing motion, spread the mixture into the baking pan that has been prepared.
  • Bake for eight minutes at 350 degrees Fahrenheit. After removing from the oven, set aside to cool for a while.

TO MAKE THE CHEESECAKE FILLING:

  • Turn the oven down to 325 degrees Fahrenheit.
  • Cream cheese and sugar should be beaten together until they are completely smooth using either a stand mixer that is equipped with a paddle attachment or a handheld mixer. Mix in the melted chocolate until it is completely incorporated into the mixture.
  • Combine the instant coffee with the hot water in a small bowl, and stir the mixture until it is completely dissolved. The Greek yogurt, flour, and vanilla extract should be added to the mixing bowl, and the mixture should be thoroughly mixed.
  • When the egg is added, mix it on low speed until it is completely incorporated.
  • The cheesecake filling should be poured over the crust that has been prepared and then spread out evenly.
  • Bake for approximately 25 minutes at 325 degrees Fahrenheit.
  • After removing from the oven, they should be allowed to cool for at least half an hour. Place in the refrigerator and wait at least three hours or overnight before removing from the refrigerator.
  • Cut into bars, then savor those bars!
