Ingredients

  • 2 medium ripe bananas(the riper the better) sliced into 1/2″ pieces
  • 1 1/2 cup blueberries
  • 1/4 cup honeyor maple
  • 1 cup uncooked quick or old fashion oats*
  • 1/4 cup chopped walnuts or pecans
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • pinch of salt
  • 1 cup fat free milkor any milk you desire
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 375 degrees Fahrenheit. An 8 x 8″ or 9 x 9″ ceramic baking dish should be lightly sprayed with cooking spray before being placed aside.
  • Create a single layer of banana slices on the bottom of the ceramic dish and arrange them in a single layer. On top of the bananas, sprinkle half of the blueberries, a quarter of a teaspoon of cinnamon, and one tablespoon of honey, and then cover the dish with aluminum foil.
  • For fifteen minutes, bake the bananas until they become tender.
  • During this time, put the oats, half of the nuts, baking powder, the remaining cinnamon, and salt in a medium bowl and stir until everything is combined perfectly.
  • Place the remaining honey, milk, egg, and vanilla extract in a separate bowl and whisk them together until they are combined.
  • After taking the bananas out of the oven, sprinkle the oat mixture over the bananas and blueberries that have been sitting in the oven.
  • It is important to ensure that the milk mixture is distributed as evenly as possible over the oats before pouring it over the oats. Add the remaining blueberries and walnuts to the top of the dish and sprinkle them on top.
  • Put the oats in the oven and bake it for approximately half an hour, or until the top is golden brown and the oatmeal has solidified. When ready, serve hot from the oven. Make six separate cuts.
