Ingredients
- 3 cups rolled oats
- 1 tsp. baking powder
- 3/4 tsp cinnamon
- 1/4 tsp salt
- 2 eggs
- 1 cup milk of choice (I used almond)
- 1/2 cup maple syrup
- 1 tsp vanilla
- 1 cup fresh blueberries
- 1 cup chopped walnuts (optional)
Icing:
- 2 tbsp powder sugar
- splash of water until desired consistency
Instructions

- Preheat the oven to 350 degrees Fahrenheit.
- Use muffin liners or grease the muffin tin.
- Oats, baking powder, cinnamon, and salt should be combined in a large bowl and mixed together.
- Eggs, almond milk, maple syrup, and vanilla extract should be mixed together in a medium basin using a whisk.
- Combine the dry components with the wet ones by stirring them together.
- Blueberries and nuts should be folded in carefully.
- To the point where each cup is completely full, fill the muffin tin.
- Bake for 25–27 minutes at 350 degrees Fahrenheit.
- After allowing it to cool for ten minutes in the tin, move it to a wire rack to complete the cooling process.
- Before placing in the refrigerator, allow it totally cool. Either they can be frozen for up to six months or they can be consumed within a week.
