Ingredients

  • 3 cups rolled oats
  • 1 tsp. baking powder
  • 3/4 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1 cup milk of choice (I used almond)
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1 cup fresh blueberries
  • 1 cup chopped walnuts (optional)

Icing:

  • 2 tbsp powder sugar
  • splash of water until desired consistency

Instructions

    1. Preheat the oven to 350 degrees Fahrenheit.
    2. Use muffin liners or grease the muffin tin.
    3. Oats, baking powder, cinnamon, and salt should be combined in a large bowl and mixed together.
    4. Eggs, almond milk, maple syrup, and vanilla extract should be mixed together in a medium basin using a whisk.
    5. Combine the dry components with the wet ones by stirring them together.
    6. Blueberries and nuts should be folded in carefully.
    7. To the point where each cup is completely full, fill the muffin tin.
    8. Bake for 25–27 minutes at 350 degrees Fahrenheit.
    9. After allowing it to cool for ten minutes in the tin, move it to a wire rack to complete the cooling process.
